I’ve been baking for a few days. My pie crusts have been ready and are now happily baking away. I’m looking forward to a relaxing day with friends, family, and plenty of wonderful food.
Maybe you’re looking for a quick and easy cranberry sauce to make today to impress your guests. Cranberry sauce is one of my favorite things to eat on this special day. Here is my very simple and fool-proof recipe. I posted it last year and we just LOVE it.
Easy Cranberry Sauce
16 ounces of fresh cranberries (2 cups)
1 1/2 cup of sugar
1 cup water
one navel orange (add the juice of 1/2 and cut the other 1/2 in chunks and add to the cranberry mixture in the pan)
1 sliver of fresh ginger (about the size of a garlic clove, peeled)
In a medium sized bowl, rinse the cranberries with cool water, and remove any stems or blemished berries. Drain the cranberries in a colander.
Heat water and sugar to boiling in 3-quart saucepan over medium heat, stirring occasionally until the sugar dissolves.. Continue boiling 5 minutes longer, stirring occasionally.
Stir in cranberries. Heat to boiling over medium heat, stirring occasionally. Continue boiling about 5 minutes longer, stirring occasionally, until cranberries begin to pop. Simmer for about 20 minutes. Don’t worry if every single cranberry does not completely pop. When the sauce is cooked, spoon out the orange pieces and the ginger sliver. Pour sauce into bowl or container. Refrigerate about 3 hours or until chilled.

I love my family. I am grateful.
I’m grateful for my beautiful mom. Today she came over and we baked together. She made her Hungarian kifli. We both baked some pies. Here she is with one her first perfectly roasted turkey.
I’m thankful for my precious children. They are my greatest blessing.
I’m really thankful for Skype and my darling in-laws. Now my kids can talk with their grandparents and great-grandmother through the computer. That’s Nonna Antonia (my husband’s grandmother) and Nonno Domenico (my father-in-law). Nonna Antonia is 83. Teresa (my mother-in-law)still won’t come to the screen to say “ciao”.
She’s upset with Domenico for spending too much time on the computer. Domenico couldn’t figure out the volume and they had to hear us through the phone. It was all good.
I’m thankful for my sweet husband. The goofiest person I know. We try to remind each other to appreciate every moment of every day.
I’m grateful for my dad and his amazing green thumb. He planted papaya trees in our front and back yard this year. He says, “Soon. Very soon.” Dad says in about 5 days we will try the first papayas from our tree.
That totally rocks. Thank you, dad!
I’m thankful for getting better at crimping and understanding my dough. Sometimes I battle with my dough. Sometimes things go smoothly. There will be more incredible pies for us to enjoy today.
I’m thankful for my health. I’m thankful for the delicious food we will eat today.
