Gabby’s Victoria Sandwich Cake

What is it about sprinkles that makes them so appealing? When I see sprinkles, or as the Brits call them, hundreds and thousands,  I spontaneously break out into a HUGE smile! Smile

How cute is the name hundreds and thousands?!? I think they came up with that name because there are hundreds and thousands of them in a little bottle. If you know the real reason why, please let me know.Smile

In New England they are called jimmies.  I read that these teeny balls of happiness were invented in France and the French called them nonpareils-without equal. Yes, nothing compares to sprinkles especially when they are nestled comfortably on buttercream wedged between two layers of delicious and moist cake!

Why is it called a Victoria Sandwich Cake? I found the reason why: “This cake was made popular in the Victorian times in the U.K. and named after Queen Victoria, and its lead to believe her majesty was very fond of this particular cake. It would be served for afternoon tea when ladies & gentlemen would take tea, sandwiches and cake for refreshments before their evening meal to bridge that hunger gap.”

The kids wanted to make me this happy cake for Mother’s Day. We saw it in a really chic magazine and the little girl that made it for her “mum” was named Gaby (Gabriella likes the Gabby spelling:). Gabriella said it HAD to be her cake for me on Mother’s Day! I used a different cake recipe and my own buttercream frosting recipe. I needed to work with American measurements.Winking smile
This is cake I will be making more often. My husband said it looked like a hamburger. Whether or not it reminded him of a burger, he sure did enjoy a huge slice of this cake last night with me while we watched The American. I enjoyed George Clooney and the mess my hundreds and thousands were making all over the couch.

Gabby’s Victoria Sandwich Cake
serves: approximately 8

inspired by: Good Food April 2011

Ingredients:

Slightly adapted by Wilton

3 cups sifted cake flour
2 1/2 teaspoons baking powder
1/2 teaspoons salt
1 3/4 cups sugar
2/3 cup butter, softened
2 eggs
1 1/2 teaspoons vanilla
1 1/4 cups milk
1/4 cup sour cream

Buttercream Frosting and Jam

Frosting recipe see below
1/4-1/2 cup your favorite jam (I used strawberry!)

Instructions:

Preheat oven to 350°F. Grease bottom of two 8-inch round cake pans and line with waxed paper or parchment paper. Mix the milk and sour cream together; set aside. Sift together flour, baking powder and salt; set aside.

Beat the sugar and butter together until light and fluffy.

Add eggs one at a time to the creamed mixture. Add the vanilla and beat until and vanilla thoroughly combined.

Add flour mixture to creamed mixture alternately with milk/sour cream mixture. Stop the mixer and scrape down the sides of the bowl with a spatula and beat well after each addition.
Spread batter evenly in prepared pans.

Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool layers in pans on wire racks 10 minutes. Remove from pans; cool completely.

Buttercream Frosting:

In a medium sized bowl, beat the butter until smooth. Gradually add in the confectioner’s sugar. Add in the milk a tablespoon at at time until you have a nice and spreadable consistency.

When the cake is completely cooled (if the cake is not completely cooled, it will ooze all over the sides of the cake), spread the buttercream frosting onto the center of the first layer up the edges of the cake.

Add on the sprinkles before adding the second layer of cake.  (I put my hand underneath where I was sprinkling to catch the sprinkles. so it wouldn’t make that big of a mess.) Place the 2nd layer of cake on top and press down gently so the buttercream will stick out a bit. Dust confectioner’s sugar on top. If you have any leftover buttercream, you could spread it on top instead of confectioner’s sugar.

Refrigerate before serving. Enjoy!Smile

Forget about this cake. What do you think about George Clooney? He lives sort of near my in-laws by Lake Como in Italy. I always giggle when we are at the train station because there are rows and rows of post cards of Lake Como with his face splattered on them. hundreds and thousands is pretty much the cutest name ever. your daughter (sans glitter) is adorable! george clooney, yes please (cover him in glitter and send him my way!). p.s. I love that I can see all your espresso makers stacked. you take your coffee seriously ;) oh and this cake, looks delicious!

As wonderful as your review was of the movie, can you please provide next time a critique of the female lead actress for those that aren’t as interested in George Clooney? ;)
I hope the clean up of the hundred and thousands doesn’t take forever!

Aw, this is so yummy…and such a great project to take on together. I just gave my mom a Mother’s Day shoutout in my weekend post for teaching me baking skills – I’m sure Gaby will be doing the same in a few years.

As for Clooney…the man is like Chanel No. 5: timeless and great for all occasions…day or night. ;-)

Haha…I would watch a boring movie to see George Clooney, too. Now to the delicious cake…so simple and lovely. My hubby would want a large slice, too. Your Gaby is gorgeous…and a good baker and writer? You must be so proud :)

This cake does look like a big delicious sweet-burger and a lot of fun to bake as well. Hope you have a wonderful visit at your in-laws next month. Who knows, perhaps you’ll see George Clooney on the train instead of just rows and rows of postcards of him.
