Raspberry and Lemon Torta

Sometimes I dream about my glorious single days! Sometimes it’s difficult to believe all the free time I had on my hands back then. I had days where I could spend frivolous hours at my favorite bookstore or just hanging out with my friends having a coffee.

Catching up with an old friend and a cup of coffee would turn into 3 cups of coffee; which would then turn into a fun dinner with 6 friends. I think about the luxurious afternoons where I would spend hours under an umbrella on the beach reading my favorite book.
Those dreamy days are long gone! But I still get to go to my favorite bookstore!Winking smile I still like to spend some time at Barnes and Nobles by myself and check out all the new books that are released and that I should be reading. I have the same routine. I check out the first rows that are right in the front beckoning me to buy them immediately!
I glance at a few beautiful covers that I would read if I only had caught up with the current pile of books by my bedside. I then take the elevator upstairs and take a look at the latest cooking magazines and cookbooks. Relishing in the silence and my little moment of pleasure, while wishing I could buy ALL the magazines! (I think I told you before about my little magazine problem!Smile)
I hear an annoying ringing sound. Time is running out! I quickly grab a pile of magazines and go back downstairs to the kids’ section. My cell phone is ringing in the bottom of my purse. I don’t dare pick it up as I know it’s my husband just wanting to know, “Where are you?? It’s my turn to look around alone upstairs!”

While Luca plays with the trains and Gabriella finds more books to read, I look at the magazines I just grabbed. I may even find a recipe I have to try and then I need to buy the magazine!
Take for example this pretty little cake! I had to try this torta! I found some beautiful raspberries at the fruit market the other day. I used turbinado sugar in the recipe and it gave the cake a gorgeous light brown color. The texture was moist. Since this was from a British magazine, you may want to try it out with some tea for Friday’s Royal Wedding!

Raspberry and Lemon Torta
recipe by Tana Ramsey

1 stick unsalted butter, melted and cooled
2 cups raspberries
juice 1/2 lemon
1 cup  turbinado (or granulated) sugar
3 eggs
1 1/2 cups plain flour
2 tsps baking powder
finely grated zest 1 unwaxed lemon 

Preheat oven to 325 F. Butter an 8-inch round baking and line the bottom with parchment paper.

In a small bowl, add the raspberries and lemon juice.
 
In a small bowl whisk together the flour, baking powder and lemon zest.
 
In a medium sized bowl whisk the sugar and eggs until pale and thick.

Carefully fold in the flour mixture. Stir in the melted butter.

Spoon in the batter into your prepared baking pan and add the raspberries including juice on top.

Sprinkle the top with sugar. (I used turbinado sugar)

Bake for approximately 50-60 minutes, or until a toothpick inserted in the middle comes out clean.

Enjoy with a hot cup of tea or coffee! Maybe you have some time to catch up with an old friend and you can share stories while devouring this delicious raspberry torta!!

Oh, this is beautiful! So fresh, perfect for spring.

I love having those rare afternoons where I have a few minutes for coffee or tea in the backyard and a book or magazine (I too have magazine issues, my husband declared “this is ridiculous” when about 4 came in the mail at once the other day)…. those kind of days are good for the soul!

I really love sitting down and looking through magazines with a big latte. And there’s nothing like doing that with a slab of some delicious baked good (like the torta here). Gorgeous!

I love your magazine reading story. I remember those days when I did not have a minute to myself. My kids are teenagers now, still taking up lots of time..lol, but I definitely have some time to myself now. Your torta looks gorgeous and delicious. Thank you for sharing it:)

What a lovely treat to have while watching the Royal Wedding tomorrow (1pm our time)! I also loved to spend my weekends at Barnes and Noble when I was single… Hours would pass by while I browsed through the books there. Now, I just lose the kids and reclaim them when I’ve had enough of reading!
