We traveled to North Carolina last summer and we made real s’mores. S’mores roasted on a pit in the yard. Like what most every good American kid does growing up. Thank goodness for our great neighbors that invited us again to their lovely cabin in North Carolina and share with my kids their great American vacation traditions. I was raised in a Sicilian house and I never heard of a s’more until recently. I grew up on cannolis, fig cookies, taralle, cassatas, mostaccioli, and pignuccata (I’m getting homesick). I will discuss more in detail about Sicilian desserts on a future post coming soon.
Back to the Luscious Chocolate Cake. I have a few chocolate cake recipes. This one I lost and came across again (thanks to the super handy blog, I will no longer have lost recipes). My friend Lisa gave it to my friend Marisa a few years back. I remember making a Hershey’s cake very similar to this years ago. Lisa’s version is from an Inn and I can’t remember the name of it. I am a Virgo and I am supposed to be very organized. I have to confess, I have a few problems with organization. This Luscious Chocolate Cake is just that: Luscious with a capital “L”. It is rich and moist. A perfect cake to bring to a party or to serve guests. Everyone loves chocolate. You will love this cake and will make it over and over again for special occasions or just because you are craving chocolate.
8 ounces butter
6 tsp cocoa powder
1/2 cup semi-sweet chocolate chips
1 tsp baking powder
Preheat oven to 350 degrees F. Spray your bundt pan with baking spray.
In a small pan, melt the butter.
In a medium sized bowl, add the cocoa powder and chocolate chips. Pour in the boiling water and stir together until you have a smooth chocolate mixture.
In another medium sized bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until combined. In a small bowl, mix together the eggs, buttermilk, butter, and vanilla, stopping the mixture when needed to scrape the sides of the bowl with a rubber spatula and combine the flour mixture. Add the buttermilk mixture a little bit at a time into the flour mixture.
Slowly add the melted chocolate mixture and mix until combined; stop the mixture when needed to scrape the sides of the bowl with a rubber spatula.
Pour the batter into your prepared bundt pan and bake about 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let cake cool completely before inverting onto your serving plate. Dust with powdered sugar or with your favorite frosting recipe.
